We’ve recently been introduced to the Baldwin Distillery in Mitchell, Canberra. Their mission is to produce an Australian “bourbon”, but with Australian raw ingredients. Let’s face it, our raw ingredients are as good if not better than the “yanks”. And yes we are a bourbon drinking nation, with bourbon being the number 1 selling brown spirit in this brown land.
Owner of Baldwin Distilling, Anthony Baldwin has really ramped up production of “Aussie Bourbon”. Baldwin said he was sick of seeing Aussie producers ‘doing Scotch-type Whisky, Gin, Schnapps or Vodka’. First on the list of new products is The Baldwin Distilling Moonshine. It is made in the tradition of the Appalachain Mountain Moonshiners – Appalachain is a cultural region in the Eastern United States that stretches from New York to Mississippi. This ‘Moonshine belt’ from the prohibition era was famous for late night shine operations. What a story!
Baldwin Moonshine is made from 100% Australian corn as is the base spirit for the production of bourbon. Fantastic to enjoy over ice or as a cocktail base.
We’ve been really intrigued by the Caramel Premium Whiskey. Coming in at 45%, this isn’t your typical caramel-type-bourbon-liqueur. The caramel notes are lifted from the corn and special train of barley used in the mash bill. There are influences of oak nuances and lingering sweet tones, so standard amongst the high corn mash bill bourbons out there.
