Same as last year the 2017 Australian Christmas Gin by Four Pillars is created by distilling puddings made using the same 1968 Women’s Weekly recipe as Cam’s mum Wilma – he just adds a cheeky splash of the previous year’s Christmas Gin for good luck!
When the puds are all tied up in cloth, they’re dropped into the botanical basket of Wilma (our copper pot still) with a spicy, earthy mix of juniper, star anise, coriander, angelica root and cassia.
The resulting ‘pudding gin’ gets blended with gin that has been ageing in 100+ year old Muscat Barrels (some of which stored Rutherglen Muscat for 80 years). Cam then adds a tweak of Classic Rutherglen Muscat for richness. And, as a new addition to last year’s recipe, he also adds a splash of Four Pillar’s own muscat that’s been maturing in puncheons that previously held aged Pedro Ximenez.
The result? More of that divine richness, with added complexity and texture. It smells like gin and tastes like Christmas.
