Lark Distilling Co is celebrating the Spirit of Whiskmas for the third year running, with the launch of Christmas Cask Release III, which has once again been created in collaboration with Hobart’s Jean-Pascal Patisserie.
The whisky begins with Tasmanian red wine casks being filled with the patisserie’s renowned fruit mince pie filling. Once these are emptied, Lark’s Head Distiller, Chris Thomson selects a number of the casks to then be filled with Lark’s own season spirit.
Thomson said: “With distance separating many families over the past 18 months our main goal for this release was to encourage friends and family to get together and celebrate the spirit of Christmas… or as we like to call it, Whiskmas.
We’re excited and grateful to be entering into our third year of collaboration with our good friends at Jean-Pascal Patisserie here in Hobart and this could just be our best festive release yet and the perfect accompaniment to a decadent festive feast.”
Tasting notes for the whisky describe “notes of citrus peel, plum pudding and toffee sauce, the delicious tipple truly is Christmas in a glass. Winter spices, stewed apple and vanilla custard on the nose give way to the warmth and comfort of gingerbread, plum pudding and toffee sauce.”
Christmas Cask Release III comes in two sizes, 100ml and 500ml with the option of being paired with a Lark Glencairn Whisky Glass. For whisky-lovers looking for something more, Lark’s Whiskmas Flight Gift Pack includes four 100ml varieties of Tasmania’s favourite spirit.
