are precious Poblano chilies, which are dried for weeks in the sun to deliver the full force of their spicy, sugary flavour. After being smoked, the chillies are cut by hand to ensure just the right amount of flavour fills each bottle. Once this is done, these delicious chili seeds are macerated in sweet cane spirit for six months. Once per week, the incredible infusion in each enormous tank is stirred only once to ensure a balance between sugar and spice. At the end of each six month cycle, the distillate is blended with just enough sugar to match the heat of that batch. No artificial dyes are added, as the dark Poblanos deliver a distinctly red colour. Despite the beautiful burnt copper look of each bottle, its flavour is not compromised by spice. This is because the Poblanos in each batch boast only a thousand Scovilles.
